My oven decided to behave today…

…and my gingerbread cake came out perfect!
I did use an oven thermometer today to monitor the temperature, as it doesn’t seem to matter what setting you put it to – the oven just decides what temperature it wants to be at. Gas mark 1 is the same as 2, 3 and 4 most of the time and then anything above that just might as well be the highest setting. It’s an old oven we inherited with the house – we’re stuck with it until we can afford to buy something new. I have dreams of induction hobs and ovens that do what they’re supposed to do!
This is a recipe my Big Sis gave me the other w/e when we were up in Nairn. It was deilcious then and I hope mine lives up to that standard.

Wow…thats the 2nd time today someone has mentioned gingerbread cake to me!! I think it’s an omen…I must eat some!:)
Actually it would have be store bought. The last attempt at me baking one ended in a very flat, funny tasting slab, & my stepdaughter in hysterics!
