I had to really hunt for open elderflower heads as I think it’s too early for them in Scotland just yet. I want to make elderflower cordial and champagne this year – never done either before, so like yourself, quite excited about it.

I may have to give jam making a go if there’s enough elderflower heads left over from making cordial. That said, I’m still waiting for the elderflower to actually flower in the garden. All the heads are their they’re just refusing to open.

Very frustrating! Especially as this will be the first year I’ve ever made it and I’ve been a little over excited about the prospect.

I’m sure your jam will go down a storm & hopefully help your friend towards making his film. Good luck!
