I’m getting back into making bread and have been baking a loaf pretty much every day or every other day for the past few weeks. I’ve developed a sourdough starter and have been feeding it daily and it’s producing some great results. It’s a slow proving processin a cold house, so I mostly bake in the evenings and I love getting the bread out of the oven at the end of the day and listening to the crust forming and crackling away.
You get some amazing patterns in the crusts…
It’s like a luna landscape sometimes, with craters and what looks like cracked earth, but you also sometimes get the texture and weave of the linen fabric the bread has been proving in.
It makes me think of the skin of an animal or something, it’s sort of scaly but very beautiful!
